Meet Our Registered Dietitian

Karina Falcone is the Registered Dietitian for New College Hospitality. She is here to help students navigate campus dining. Karina uses evidence-based research to help each student understand their unique nutritional needs, so they feel empowered to make their own choices about their daily health and well-being.

Karina is from Miami where she attended Florida International University (FIU) to earn her Bachelor of Science in physics and her Master of Science in Nutrition and Dietetics. During her Dietetic Internship with FIU, she gained knowledge and experience in various settings including food service management, clinical nutrition, long-term care, WIC, community nutrition, and children’s nutrition. Karina is an active member of the Florida Academy of Nutrition and Dietetics (FAND). She has an interest in functional and integrative nutrition and follows the “food is medicine” mentality.


Special Dietary Request & Food Allergy Form

New College Hospitality makes it a priority to accommodate students with dietary restrictions and food allergies. It is also in our best effort to accommodate students whose diet may differ due to religious and cultural backgrounds. You are not only in good hands with trained staff, but we also have a registered dietitian available to all meal plan holders. To better help us with your specific needs, please fill out our Special Dietary Request / Food Allergy Form and attach any medical documentation describing restrictions due to food allergy/intolerance or condition.
